Organic psyllium powder (Plantago ovata husk)
Psyllium powder is a finely milled, light-brown powder made from the seed husks of Plantago ovata. Its taste and smell are almost neutral, so it does not change the flavour of the finished product. The powder absorbs water quickly and forms a gel-like mass — this is the basis for its use in both baking and industrial production.
How to use it
- Gluten-free baking — a binder that gives dough structure and holds moisture; works in bread, buns and pancakes.
- Thickener — gives body to sauces, soups and marinades without a starchy mouthfeel.
- Plant-based binder — 1 tbsp powder + 3 tbsp water replaces about one egg.
- Water binding — reduces purge in sausages, minced meat and plant-based products.
- Longer shelf life — moisture stays in the product and baked goods stay soft for longer.
Dosage
| Application | Amount | Note |
|---|---|---|
| Gluten-free bread and buns | 2–5% of flour weight | mix into dry ingredients first |
| Gluten-free dough (general) | 3–6% of flour weight | start from the lower end |
| Sauces and soups | 1–2% of finished weight | disperse in a little water first |
| Egg replacer | 1 tbsp powder + 3 tbsp water | let it swell for 5 minutes |
| Sausages and minced meat | 0.5–1% of the mass | add together with water |
Tip: mix the powder first with a small amount of liquid and let it swell for 2–5 minutes to avoid lumps. Add more liquid gradually if needed.
